Spice Cake with Carmel Frosting

Ingredients

  • Cake:
  • 2 1/4 c flour
  • 1 1/4 c packed brown sugar
  • 1/2 c sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 1 c buttermilk
  • 2/3 c shortening
  • 1 tsp. vanilla
  • 3 eggs
  • Frosting:
  • 1/2 c margarine/butter
  • 1 c packed brown sugar
  • 1/4 c milk
  • 3 c powdered sugar
  • 1/2 tsp. vanilla

Directions

  1. Cake:

  2. Combine all cake ingredients. Beat 3 min. on medium speed.

  3. Pour into battered and greased pan.

  4. Bake at 350 for 40 to 45 minutes. Cool 1 hr.

  5. Frosting:

  6. In pan, melt butter and add brown sugar.

  7. Cook over low heat for 2 min., stirring constantly.

  8. Add milk and keep cooking until rolling boil.

  9. Remove from heat.

  10. Gradually add powdered sugar and vanilla. Mix well and spread on cooled cake.
