Blueberry Upside-down Cake

Ingredients

  • 4 c blueberries
  • 1 1/3 sugar
  • 3 tbsp. cornstarch
  • 2 tbsp. lemon juice
  • 1 1/4 c sugar
  • 1/2 c butter
  • 2 eggs
  • 1 1/2 tsp. vanilla
  • 3 c flour
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c milk

Directions

  1. Place blueberries in buttered 9×13 pan.

  2. Sprinkle w/ sugar and cornstarch.

  3. Sprinkle with lemon juice.

  4. Then cream sugar, butter, eggs & vanilla.

  5. Add flour, baking powder & salt.

  6. Pour over blueberries.

  7. Bake at 350 for 35 minutes.

  8. Cool 10 minutes, then invert.
