Chicken Caesar Salad with Cannellini Beans and Avocado

Ingredients

  • 1 head romaine lettuce, torn into bite-size pieces
  • 1 can cannellini beans,rinsed and drained
  • 1 avocado, sliced
  • 1/3 cup grated Parmesan cheese
  • Caesar salad dressing (use gluten-free labeled) or make it from scratch: recipe here or here
  • 1 lb boneless skilled chicken breasts, grilled and sliced

Directions

  1. Combine lettuce (torn into small pieces), beans (rinsed and drained), sliced avocado and the cheese in a large bowl.
  2. Toss with dressing, top with grilled and sliced chicken breast, and serve immediately.
