Sweet Potaoe Casserole

Ingredients

  • 4 cups sweet potatoes, cooked & mashed
  • 4 eggs
  • 1 cup sugar
  • 1 cup milk
  • 1/2 cup butter
  • 1 tablespoon lemon juice (fresh is best)
  • 1 teaspoon cinnamon, ground
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg, ground
  • 1/2 teaspoon vanilla essence
  • 1 cup brown sugar
  • 1 cup pecans, chopped
  • 1 cup desiccated coconut
  • 1/2 cup all-purpose/ plain flour
  • 1/4 cup butter

Directions

  1. Preheat oven to 180 degrees Celsius (or approximately 350 degrees F).

  2. In a large bowl, beat the eggs well.

  3. Add in the milk, butter and sugar.

  4. Mix in the sweet potato, lemon juice, vanilla essence, salt, ground cinnamon & nutmeg.

  5. Ensure mixture is well combined, then set aside while you prepare the topping.

  6. In a separate large bowl, combine the brown sugar, chopped pecans, desiccated coconut, flour and butter.

  7. Mix well.

  8. Topping mixture should be crumbly & crunchy.

  9. Lightly grease a baking dish.

  10. Spoon the sweet potato mixture into the baking dish.

  11. Sprinkle the topping over the sweet potato mixture.

  12. Place baking dish into your preheated oven and cook for approximately 30 minutes, or until the topping is golden and the casserole has heated through.
