Potato Candy

Ingredients
- 1 small, COOLED potato (bake or microwave)
- 2-3 c powdered sugar
- 1 tsp. vanilla
- 1/2-2/3 c creamy peanut butter
Directions

Mash potato & add powdered sugar & vanilla.

Add additional cup of powdered sugar a bit at a time until the dough can be rolled out.

Roll dough to 1/4" on a powered sugar surface.

Spread peanut butter in thin layer over the top of the dough.

Roll it up like a jelly roll starting at the long side.

Wrap in plastic wrap. Refrigerate for 2 hours.

Cut in 1/2" slices. Keep refrigerated.

Makes 1 1/2 pounds.
