Banana Custard Dessert

Ingredients

  • 3/4 c sugar
  • 3 tbsp. flour
  • dash of salt
  • 4 eggs (1 whole, 3 yolks then 3 whites)
  • 2 c milk
  • 1/2 tsp. vanilla
  • Nilla wafers
  • 5-6 sliced bananas

Directions

  1. Combine 1/2 c sugar, flour and salt in double boiler.

  2. Mix in 1 whole egg and 3 egg yolks. Add milk

  3. Cook, uncovered over boiling water, stirring constantly until thick.

  4. Remove from heat and add vanilla.

  5. Spread small amount of mixture on bottom of 1 1/2 qt. casserole dish.

  6. Cover this with Nilla wafers.

  7. Top with banana slices and put 1/3 of custard over bananas.

  8. Continue to layer wafers, bananas, custard making 3 layers of each, ending w/ custard.

  9. Beat 3 remaining eggs whites until stiff.

  10. Add remaining 1/4 c sugar and beat until mix forms stiff peaks.

  11. Pile white mixture on pudding covering all.

  12. Bake at 425 for 5 minutes.

  13. Serve warm or chill.
