Strawberry shortcake poke cake

Ingredients

  • 3/4 butter
  • 1 2/3 c sugar
  • 1 tsp. lemon zest
  • 3 eggs
  • 1 tbsp. vanilla
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 1/4 c flour
  • 1 1/2 c buttermilk
  • 1/3 c water
  • 1 pk. unflavored gelatin
  • 4 c. finely chopped strawberries (divided)
  • 3 tbsp. sugar
  • 1/2 lemon, juiced
  • Cool Whip or homemade whipped cream

Directions

  1. eheat to 350. Butter 9×13 pan.

  2. Cream together butter, sugar and lemon zest.

  3. Beat in eggs one at a time.

  4. Add vanilla , baking powder, baking soda and salt. Mix well.

  5. Add flour and buttermilk. Stir until just combined.

  6. Pour into pan. Bake 35-40 minutes. Cool.

  7. Poke hole into cake.

  8. In small pan combine water and gelatin.

  9. Cook lover low until clear.

  10. In blender combine 2 cups strawberries, lemon juice, sugar and gelatin. Puree smooth

  11. Stir the remaining 2c strawberries into pureed berries.

  12. Spread mixture over cake, pushing strawberries into hopes.

  13. Refrigerate 2 hours.

  14. Serve with Cool Whip.
