Strawberry shortcake poke cake

Ingredients
- 3/4 butter
- 1 2/3 c sugar
- 1 tsp. lemon zest
- 3 eggs
- 1 tbsp. vanilla
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 1/4 c flour
- 1 1/2 c buttermilk
- 1/3 c water
- 1 pk. unflavored gelatin
- 4 c. finely chopped strawberries (divided)
- 3 tbsp. sugar
- 1/2 lemon, juiced
- Cool Whip or homemade whipped cream
Directions

eheat to 350. Butter 9×13 pan.

Cream together butter, sugar and lemon zest.

Beat in eggs one at a time.

Add vanilla , baking powder, baking soda and salt. Mix well.

Add flour and buttermilk. Stir until just combined.

Pour into pan. Bake 35-40 minutes. Cool.

Poke hole into cake.

In small pan combine water and gelatin.

Cook lover low until clear.

In blender combine 2 cups strawberries, lemon juice, sugar and gelatin. Puree smooth

Stir the remaining 2c strawberries into pureed berries.

Spread mixture over cake, pushing strawberries into hopes.

Refrigerate 2 hours.

Serve with Cool Whip.
