Savory Bacon Bread Pudding

Ingredients
- 6 oz. bacon, cut into 1/2-inch pieces
- 6 oz. sharp cheddar cheese, cut into 1/2-inch cubes
- 1/3 cup chopped green onion, white and green parts
- 5 cups torn day-old country bread
- 6 eggs
- 2 cups milk
- Salt and ground black pepper
- Butter, oil or reserved bacon drippings for frying, optional
Directions
- Heat oven to 400 degrees. Coat a 4 by 8-inch loaf pan with butter or nonstick spray.
- In a medium skillet over medium heat, cook bacon until crisp. Drain on paper towels.
- In a large bowl, combine bacon, cheese, onion and bread.
- In a separate large bowl, whisk together the eggs and milk. Season with salt and pepper to taste. Pour egg mixture over bacon mixture and gently stir to mix well. Let stand 15 minutes.
- Pour mixture into prepared loaf pan, cover with foil and place loaf pan in a larger, deep baking pan or roaster. Add hot water to roasting pan until it reaches 3/4 of the way up the sides of the loaf pan.
- Bake 45 minutes, remove foil and bake 20 minutes more. Cool in pan 20 minutes. Then cover and refrigerate overnight.
- To serve; Slice bread pudding into 1 to 1 1/2 inch thick slices.
- Heat a little butter, oil or bacon drippings in a large skillet and fry bread pudding slices until golden brown on both sides.
