Sherry Wine Jelly

Serves 8 people

Ingredients

  • 3/4 cup cold water
  • 3 Tbsp. (envelopes) unflavored gelatin
  • 2 1/4 cups water
  • 1 1/2 cups sugar
  • 1 cup plus 2 Tbsp. sherry
  • 3/4 cup strained orange juice
  • 1/3 cup strained lemon juice
  • 9 drops red food coloring
  • Sweetened whipped cream

Directions

  1. Lightly oil a 1 1/2 quart fancy mold with nonstick cooking spray and set aside to drain.
  2. Pour the 3/4 cup cold water into a bowl; sprinkle gelatin evenly over water. Let stand about 5 minutes to soften.
  3. Heat remaining water until very hot. Remove from heat and immediately stir in softened gelatin until gelatin is completely dissolved. Add sugar, stirring until dissolved.
  4. Blend in sherry, orange juice, lemon juice, and food coloring. Pour mixture into the prepared mold and chill in refrigerator until firm.
  5. Unmold onto a chilled serving plate. Serve with sweetened whipped cream.
