Ingredients
- 3/4 cup cold water
- 3 Tbsp. (envelopes) unflavored gelatin
- 2 1/4 cups water
- 1 1/2 cups sugar
- 1 cup plus 2 Tbsp. sherry
- 3/4 cup strained orange juice
- 1/3 cup strained lemon juice
- 9 drops red food coloring
- Sweetened whipped cream
Directions
- Lightly oil a 1 1/2 quart fancy mold with nonstick cooking spray and set aside to drain.
- Pour the 3/4 cup cold water into a bowl; sprinkle gelatin evenly over water. Let stand about 5 minutes to soften.
- Heat remaining water until very hot. Remove from heat and immediately stir in softened gelatin until gelatin is completely dissolved. Add sugar, stirring until dissolved.
- Blend in sherry, orange juice, lemon juice, and food coloring. Pour mixture into the prepared mold and chill in refrigerator until firm.
- Unmold onto a chilled serving plate. Serve with sweetened whipped cream.
