Skillet Cup Custard

Ingredients

  • 2 cups milk
  • 3 eggs, slightly beaten
  • 1/4 cup sugar
  • 1/8 tsp. salt
  • 1 tsp. vanilla
  • 1/2 cup flaked coconut
  • 6 tsp. brown sugar
  • Toasted coconut

Directions

  1. Scald milk in a saucepan. Combine eggs, sugar, salt, vanilla and flaked coconut. Mix til blended. Add slowly to milk, stirring constantly. Place 1 tsp. brown sugar in each of 6 buttered custard cups. Pour in egg mixture.
  2. Fill an electric skillet to a depth of 1 inch with hot water. Place custard cups in skillet. Cover and cook at 200 degrees for 30 minutes or until custards are firm. Remove from heat immediately. Serve garnished with toasted coconut.
