Snow Princess Tapioca Cream

Serves 8 people

Ingredients

  • 2 egg whites
  • 1/4 cup sugar
  • 2 egg yolks, slightly beaten
  • 3 cups milk
  • 1/3 cup quick-cooking tapioca
  • 1/4 to 1/3 cup sugar
  • 1/4 tsp. salt
  • 1 1/2 tsp. vanilla extract

Directions

  1. Beat egg whites with rotary beater until frothy. Add 1/4 cup sugar gradually and beat until rounded peaks are formed. Set aside.
  2. Put egg yolks in a saucepan; gradually add milk, stirring to combine. Add tapioca, sugar, and salt, stirring well.
  3. Place over medium heat and bring mixture to a full boil (about 5 to 8 minutes), stirring constantly. Do not overcook.
  4. Remove from heat and blend a small amount of hot tapioca mixture gradually into egg whites. Then quickly blend in, remaining tapioca mixture. Cool slightly and add vanilla. Serve warm or chilled.
