Ingredients
- 2 egg whites
- 1/4 cup sugar
- 2 egg yolks, slightly beaten
- 3 cups milk
- 1/3 cup quick-cooking tapioca
- 1/4 to 1/3 cup sugar
- 1/4 tsp. salt
- 1 1/2 tsp. vanilla extract
Directions
- Beat egg whites with rotary beater until frothy. Add 1/4 cup sugar gradually and beat until rounded peaks are formed. Set aside.
- Put egg yolks in a saucepan; gradually add milk, stirring to combine. Add tapioca, sugar, and salt, stirring well.
- Place over medium heat and bring mixture to a full boil (about 5 to 8 minutes), stirring constantly. Do not overcook.
- Remove from heat and blend a small amount of hot tapioca mixture gradually into egg whites. Then quickly blend in, remaining tapioca mixture. Cool slightly and add vanilla. Serve warm or chilled.
