Chocolate & Peanut Butter Mousse Cheesecake

Ingredients

  • Crust:
  • 1 1/2 c Oreo crumbs
  • 1/4 c melted butter
  • Mousse:
  • 3/4 c peanut butter
  • 5 oz. cream cheese, softened
  • 2 tbsp. butter, softened
  • 1 1/4 c powdered sugar
  • 1 1/4 c heavy cream, divided
  • 5 oz. bittersweet chocolate, chopped
  • 1 milk chocolate candy bar, chopped
  • 1/3 c sugar
  • 1/4 c milk
  • 1 tsp. vanilla
  • Ganache:
  • 6 oz. Bitterweet chopped chocolate
  • 2/3 c heavy cream
  • 1 tsp. vanilla

Directions

  1. Combine Oreos and butter.

  2. Press into bottom of a greased 9" springform pan.

  3. Beat peanut butter, cream cheese and butter.

  4. Add powdered sugar. Beat until smooth.

  5. Fold in 1 1/4 whipped cream.

  6. Spread over the crust

  7. In pan bring sugar and milk just to a boil.

  8. Pour this over a combination of the chocolates and whisk smooth. Stir in vanilla.

  9. Cool to room temp. Stir occasionally.

  10. Fold in remaining whipped cream.

  11. Spread over peanut butter layer.

  12. Cover and freeze for 2 hours.

  13. Ganace:

  14. Bring cream just to a boil. Pour over chocolate and whisk until smooth.

  15. Stir in vanilla.

  16. Cool to spreading consistency.

  17. Refrigerate unit set.
