Slow Cooker Mongolian Beef Recipe

Ingredients

  • 1 1/2 pounds beef, flank steak ( cut into stir-fry sized strips )
  • 1/4 cup cornstarch
  • 2 tablespoons Olive oil
  • 1/2 teaspoon ginger root ( minced )
  • 2 clove(s) garlic ( minced )
  • 3/4 cup soy sauce
  • 3/4 cup water
  • 3/4 cup brown sugar
  • 1/2 cup carrots ( shredded )
  • 3 green onion ( medium, chopped )

Directions

  1. Spray slow cooker with non-stick cooking spray.

  2. Place cornstarch in a bowl.

  3. Coat each piece of steak in cornstarch and place in crock pot.

  4. Discard any remaining cornstarch.

  5. Combine remaining ingredients in a bowl and pour over beef in crockpot.

  6. Cook in crockpot on high for 2-3 hours or low for 4-5 hours.

  7. Serve over rice, topped with additional sliced green onions.
