Ingredients
- 1 cup uncooked rice
- 3 1/2 cups milk, divided
- 1/2 cup sugar
- 2 Tbsp. butter or margarine
- 1/2 tsp. salt
- 2 eggs
- 1 tsp. vanilla extract
- 1 cup whipping cream
- Fresh strawberries,, hulled and sliced
- fresh blueberries
Directions
- Combine rice, 3 cups milk, sugar, butter and salt in 2-quart saucepan. Bring to a boil, stir. Cover; simmer until very thick and creamy, about 50 minutes, stirring occasionally. Beat eggs and remaining milk. Stir into rice mixture. Cook 2 minutes. Add extracts. Cool. Whip cream. Reserve 1/2 cup for garnish; fold remainder in pudding. Chill. Alternate pudding and fruit in layers in parfait glasses. Garnish with reserved cream.
