Polenta Pizza Crust – Gluten Free

Ingredients

  • 1 1/3 c gluten free medium grind cornmeal
  • 4 c water
  • kosher salt and ground pepper
  • 1 1/2 tbsp. olive oil
  • desired toppings

Directions

  1. Mix cornmeal, water and salt, then cook in microwave for 5 minutes.

  2. Stir thoroughly, cook 5 more minutes.

  3. Stir, cook until very thick (5min)

  4. Stir, mix in olive oil and pepper.

  5. Brush pan generously with oil.

  6. Spread mixture on 12" pan.

  7. Bake at 375 until crust browns in spots (about 20 minutes). Let stand 5 min.
