Roast Chicken & Vegatables with Spices

Ingredients

  • Chicken pieces 2 1/4-3lb.
  • 3 tbsp. olive oil
  • 2 tsp. sweet paprika
  • 2 tsp. coriander
  • 2 tsp. cumin
  • 3/4 tsp. red pepper flakes
  • l large lemon zest
  • 1 tsp. kosher salt, ground pepper
  • 1 kb. butternut squash pieces
  • 1 lb. fingerling potatoes, halved

Directions

  1. In large bowl add 2 tbsp. oil, add chicken to coat.

  2. Mix spices and lemon zest. Set aside 1 tbsp. of spice mix to use on the vegetables.

  3. Add the remainder to the chicken..

  4. Add 1 tsp. of salt and some black pepper.

  5. Arrange the chicken skin side up on 1/2 of a large rimmed baking sheet.

  6. Put vegetables in same spice bowl and add remaining spices. Place on 2nd 1/2 of pan.

  7. Bake in oven about 25 minutes until done.
