Roast Chicken & Vegatables with Spices

Ingredients
- Chicken pieces 2 1/4-3lb.
- 3 tbsp. olive oil
- 2 tsp. sweet paprika
- 2 tsp. coriander
- 2 tsp. cumin
- 3/4 tsp. red pepper flakes
- l large lemon zest
- 1 tsp. kosher salt, ground pepper
- 1 kb. butternut squash pieces
- 1 lb. fingerling potatoes, halved
Directions

In large bowl add 2 tbsp. oil, add chicken to coat.

Mix spices and lemon zest. Set aside 1 tbsp. of spice mix to use on the vegetables.

Add the remainder to the chicken..

Add 1 tsp. of salt and some black pepper.

Arrange the chicken skin side up on 1/2 of a large rimmed baking sheet.

Put vegetables in same spice bowl and add remaining spices. Place on 2nd 1/2 of pan.

Bake in oven about 25 minutes until done.
