Ingredients
- 4 quarts ground or shredded zucchini
- 6 green peppers, ground
- 6 medium onions, ground
- 1/2 cup salt
- Ice
- 5 cups granulated sugar
- 3 cups vinegar
- 2 tsp. turmeric
- 2 tsp. celery seed
- 3Tbsp. mustard seed
Directions
- Combine the zucchini, peppers onions and salt. Place in a very large container and top with ice. Let stand for 3 hours. Drain.
- Prepare jars, lids and canner .
- In a large saucepan, combine the sugar, vinegar and spices. Add zucchini mixture and bring to a boil. Simmer 10 minutes. Ladle into prepared jars. Seal and process in hot water bath for 10 minutes. Remove canner lid. Let jars stand in water for 5 minutes, then remove to towel-lined table or countertop to cool undisturbed for 12 to 24 hours. Refrigerate any jars that did not seal.
