Hashed Brown potatoes

Ingredients
- 3 medium potatoes
- 3 tbsp. butter
- 1/4 c finely chopped onion
- 1/2 tsp. salt
- dash pepper
Directions

Prepare and cook whole potatoes for 20-25 minutes. Drain and chill.

Peel potatoes and shred to make 3 c potatoes.

Melt butter in skillet.

Combine potatoes, onion, salt, and pepper.

Pat into the skillet.

Cook over low about 15-20 min. until inside is crisp.

Cut with a spatula to make 4 wedges. Flip.

Cook 5 more minutes until golden.
