Sweet Potato-Cashew Bake

Serves 7 people

Ingredients

  • 6 medium sweet potatoes
  • 1/2 c packed brown sugar
  • 1/3 c broken cashews
  • 1/4 tsp. ground ginger
  • 1/2 tsp. salt
  • 1 (8 3/4oz) can peach slices
  • 3 tbsp. butter

Directions

  1. Cook whole sweet potatoes in water.

  2. Drain, peel and cut into thick pieces.

  3. Combine brown sugar, cashews, ginger, and salt.

  4. Drain peaches.

  5. In a 10×6×2 baking dish, layer 1/2 of potatoes, peaches and brown sugar mix. Repeat. Dot with butter. Cover

  6. Bake at 350 for 30 minutes. Uncover.

  7. Bake 10 minute more.

  8. Spoon brown sugar syrup over before serving.
