Sweet Potato-Cashew Bake

Ingredients
- 6 medium sweet potatoes
- 1/2 c packed brown sugar
- 1/3 c broken cashews
- 1/4 tsp. ground ginger
- 1/2 tsp. salt
- 1 (8 3/4oz) can peach slices
- 3 tbsp. butter
Directions

Cook whole sweet potatoes in water.

Drain, peel and cut into thick pieces.

Combine brown sugar, cashews, ginger, and salt.

Drain peaches.

In a 10×6×2 baking dish, layer 1/2 of potatoes, peaches and brown sugar mix. Repeat. Dot with butter. Cover

Bake at 350 for 30 minutes. Uncover.

Bake 10 minute more.

Spoon brown sugar syrup over before serving.
