Cheddar Squash Puff

Ingredients
- 2 lb. zucchini or yellow crookneck squash
- 1 c sour cream
- 2 beaten egg yolks
- 2 tbsp. flour
- 2 stiff beaten egg whites
- 1 1/2 c shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- 1/4 c fine dry bread crumbs
- 1 tbsp. meted butter
Directions

Thinly slice unpeeled squash to make 6 cups.

Cook, drain well.

Combine sour cream, egg yolks, and flour.

Food in the beaten egg whites.

In 12×7 1/2x 2 baking dish.

Layer 1/2 squash, egg mix and cheese.

Sprinkle with bacon. Repeat.

Combine bread crumbs and butter. Sprinkle.

Bake at 350 for 20-25 minutes.
