Ingredients
- 1/3 cup shortening
- 2/3 cup brown sugar
- 2 eggs
- 1 cup all-purpose flour, sifted
- 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1/2 tsp. cloves
- 1/4 cup milk
- 1/2 cup candies cherries, chopped
- 1/4 cup citron, chopped
- 1/2 cup raisins
- 1/2 cup nuts, chopped
- 1 tsp. rum extract
Directions
- Cream shortening and sugar thoroughly. Add eggs and beat well. Alternately add sifted dry ingredients and milk. Add fruits, nuts and flavoring. Mix well. Turn into a well greased 1 quart mold. Cover with foil. Pour 6 cups of water into pressure cooker. Set mold on top of rack, cover cooker and allow a small stream of steam to escape from the vent tube for 2 1/2 hours. Do not use control. Remove cooker from heat. Let stand for 5 minutes, and then open.
