Steamed Date-Walnut Pudding

Ingredients
- 1 1/2 cups sifted all-purpose flour
- 1 tsp. baking powder
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. ground cinnamon
- 1/8 tsp. mace
- 1/2 cup sugar
- 3 Tbsp. butter or margarine
- 1 cup orange marmalade
- 1 Tbsp. grated lemon rind
- 1 tsp. vanilla
- 1 cup chopped walnuts
- 1 cup chopped dates
- 1/2 cup candied cherries, chopped
Directions
- Butter a 6- cup pudding mold or heat-proof bowl; sprinkle with sugar.
- Sift flour, baking powder, baking soda, salt, cinnamon, mace on wax paper.
- Beat egg in a large bowl, beat in sugar, butter, orange juice, marmalade, lemon rind and vanilla.
- Combine walnuts, dates and cherries with flour mixture; stir into egg mixture. Turn into prepared mold of bowl; cover (or use double layer of heavy foil to cover tightly).
- Place on rack in a large kettle (or make a doughnut shape of crumpled foil to fit bottom of kettle to serve as a rack), pour in boiling water to half-way point on mold. Cover kettle. Keep water gently boiling; add more boiling water, if necessary. Steam 2 1/2 hours
- Cool pudding 10 minutes on wire rack, turn out onto serving plate. Serve warm.

to reheat: Place pudding on sheet of heavy foil; bring foil up and gather at top, folding securely, to make pouch. Place pudding on rack in same kettle it was cooked in. Pour 2 inches of boiling water into kettle; cover; simmer for 30 minutes, or until heated through.
