Steamed Date-Walnut Pudding

Ingredients

  • 1 1/2 cups sifted all-purpose flour
  • 1 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. mace
  • 1/2 cup sugar
  • 3 Tbsp. butter or margarine
  • 1 cup orange marmalade
  • 1 Tbsp. grated lemon rind
  • 1 tsp. vanilla
  • 1 cup chopped walnuts
  • 1 cup chopped dates
  • 1/2 cup candied cherries, chopped

Directions

  1. Butter a 6- cup pudding mold or heat-proof bowl; sprinkle with sugar.
  2. Sift flour, baking powder, baking soda, salt, cinnamon, mace on wax paper.
  3. Beat egg in a large bowl, beat in sugar, butter, orange juice, marmalade, lemon rind and vanilla.
  4. Combine walnuts, dates and cherries with flour mixture; stir into egg mixture. Turn into prepared mold of bowl; cover (or use double layer of heavy foil to cover tightly).
  5. Place on rack in a large kettle (or make a doughnut shape of crumpled foil to fit bottom of kettle to serve as a rack), pour in boiling water to half-way point on mold. Cover kettle. Keep water gently boiling; add more boiling water, if necessary. Steam 2 1/2 hours
  6. Cool pudding 10 minutes on wire rack, turn out onto serving plate. Serve warm.
  7. to reheat: Place pudding on sheet of heavy foil; bring foil up and gather at top, folding securely, to make pouch. Place pudding on rack in same kettle it was cooked in. Pour 2 inches of boiling water into kettle; cover; simmer for 30 minutes, or until heated through.
