Suet Pudding

Serves 12 people

Ingredients

  • 1 cup suet (pressed down and run through a coarse food chopper)
  • 1 cup raisins
  • 1 cup dark syrup
  • 1 cup buttermilk
  • 1/2 cup currants (optional)
  • 2 even tsp. soda
  • Pinch salt
  • Flour

Directions

  1. Combine all ingredients except flour and mix well. Add just enough flour to make a stiff dough. Place into greased 2- quart baking dish and steam in steamer on top of stove for at least 1 1/2 hours or until done. Serve with lemon sauce or plain cream. Reheat by re-steaming.
