Sunny Citrus Parfaits

Ingredients
- 1 envelope unflavored gelatin
- 3/4 tsp. Sweet 'n' Low (2 packets)
- 1/2 cup orange juice
- 2 eggs, separated
- 1 cup skim milk
- 1 tsp. orange extract
- 1 medium orange, chopped
Directions
- In medium saucepan, mix gelatin with sweetener, blend in egg yolks, beaten with juice. Let stand 1 minute. Stir over low heat until gelatin is completely dissolved, about 5 minutes. Add milk and orange extract. Pour into large bowl and chill, stirring occasionally until mixture mounds slightly when dropped from spoon.
- In medium bowl, beat egg whites until stiff. Fold into gelatin mixture in parfait glasses or dessert dishes, alternately layer gelatin mixture with orange, Chill until set.
