Ingredients
- 4 cups grated raw sweet potatoes
- 1 cup molasses (or honey)
- 3/4 cup milk
- 1 tsp. nutmeg
- 1/2 cup margarine, melted
- 1/2 tsp. cloves
- 1/2 cup chopped nuts
- 3 eggs. well beaten
Directions
- Mix all ingredients together, except eggs. Ad eggs; stir until well blended. Pour into 1 1/2- quart baking dish sprayed with non-stick spray.
- Bake at 375 degrees for 50-60 minutes or until done.

Note: may substitute 1/2 cup granulated sugar and 1/2 cup syrup in place of molasses or honey.
- Testing custard for doneness: Insert tip of knife blade in pudding half-way between center and edge. If blade comes out clean, custard will be firm all the way through when it cools. If inserted in center, filling should cling like a thick cream sauce.
