Sweet Potato Pudding

Ingredients

  • 4 cups grated raw sweet potatoes
  • 1 cup molasses (or honey)
  • 3/4 cup milk
  • 1 tsp. nutmeg
  • 1/2 cup margarine, melted
  • 1/2 tsp. cloves
  • 1/2 cup chopped nuts
  • 3 eggs. well beaten

Directions

  1. Mix all ingredients together, except eggs. Ad eggs; stir until well blended. Pour into 1 1/2- quart baking dish sprayed with non-stick spray.
  2. Bake at 375 degrees for 50-60 minutes or until done.
  3. Note: may substitute 1/2 cup granulated sugar and 1/2 cup syrup in place of molasses or honey.

  4. Testing custard for doneness: Insert tip of knife blade in pudding half-way between center and edge. If blade comes out clean, custard will be firm all the way through when it cools. If inserted in center, filling should cling like a thick cream sauce.
