Ingredients
- 2 cups milk
- 1/4 cup sugar
- 2 1/2 Tbsp. quick-cooking tapioca
- 1/4 tsp. salt
- 1 tsp. vanilla
- 2 eggs, separated
- 2 Tbsp. sugar
Directions
- Combine milk, 1/4 cup sugar, tapioca, salt, vanilla and egg yolks in 4-cup glass measure, beat with rotary beater.
- Microwave for 8 minutes on simmer. Beat well and continue cooking for 6 to 7 minutes, on simmer, or until mixture boils (about 190 degrees).
- Beat egg whites in small mixing bowl until frothy. Gradually add 2 tablespoons sugar, beating until mixture forms soft peaks. Fold egg white mixture into pudding. Serve warm or cold.
