Buffalo Chicken Noodle Bake

Can be made with spaghetti squash noodles or zucchini noodles
Approximately 6 carbs per serving (5 servings)

Cook time: 30 minutes
Serves 5 people
Ingredients
- 1 lb chicken, cooked and chopped
- 3 cups spaghetti squash noodles (about 1/2 squash)
- 1 stalk celery, chopped
- 1-1/2 tbsp Parmesan cheese
- 1/2 cup sour cream
- 1 tbsp butter
- 1 tbsp red pepper hot sauce
- 3 tbsp canned pumpkin
- 1/2 tsp ground mustard
- 1/4 tsp garlic powder
- 1/3 cup shredded Cheddar cheese

Preheat oven to 400* and grease a 2 quart casserole dish

In a medium sauce pan over medium heat, combine butter, sour cream, hot sauce, pumpkin, mustard, garlic powder, and Parmesan; melt all ingredients and mix until combined

Remove excess liquid from squash noodles; place in prepared dish

Place chicken on top of noodles; pour sauce over chicken in dish

Bake at 400* for 30 min; remove and top with cheddar cheese

Serve when cheese has melted
