Ingredients
- 1/2 cup butter, softened
- 2 cups granulated sugar
- 2 tsp. vanilla extract
- 2 eggs
- 2 cups all-purpose flour
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 4 cups coarsely chopped, cored and peeled apples
- 1 cup chopped walnuts, optional
- 1/2 cup finely packed brown sugar
- Whipped cream, for serving
Directions
- Heat oven to 350 degrees. Coat a 9 × 13- inch baking dish with cooking spray or butter.
- In a large bowl, with an electric mixer, cream butter, sugar and vanilla until light and fluffy. Add eggs, one at a time, mixing well after each addition. Continue beating until mixture is fluffy. Add flour, baking soda and cinnamon and mix well; the mixture will be crumbly.
- Add apples and walnuts and mix just until incorporated. Press mixture into he bottom of prepared pan and sprinkle with brown sugar.
- Bake 30 to 35 minutes or until golden brown. Serve warm with a dollop of whipped cream.
