Zippy Corn Pudding

Ingredients
- 2 Tbsp. butter, melted
- 2 Tbsp. flour
- 1 1/2 cups evaporated milk
- 2 1/2 cups creamed corn
- 2 tsp. finely chopped scallion
- 1 tsp. finely chopped jalapeno
- 1/2 tsp. minced garlic
- 1 1/2 tsp. baking powder
- 2-3 dashes each salt and pepper
- 4 well-beaten egg yolks
Directions
- Combine melted butter and flour. heat on low for 1 minute, stirring constantly.
- Whisk in evaporated milk until smooth. Remove from heat. Add creamed corn, scallion, jalapeno, garlic and baking powder. Season with salt and pepper to taste. Fold in egg yolks.
- Butter a 1 1/2 quart shallow baking dish. Dust well with corn meal. Pour in corn mixture. Place on rack on baking tray. Bake at 350 degrees for 40-45 minutes. Cool 5 minutes. Serve as a side dish.
