Cauliflower Rice

Serves 4 people

Ingredients

  • Low-calorie cooking spray
  • 1 head cauliflower
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped, fresh parsley
  • 1/2 cup chopped carrots
  • 1/2 cup peas

Directions

  1. Cut the cauliflower into florets. In batches, add cauliflower to food processor (or blender) and gently pulse until cauliflower becomes the texture of rice. Be careful not to over pulse.
  2. In a small pot, cook peas and carrots with small amount of water until tender.
  3. Coat large skillet with cooking spray and add cauliflower, salt, and pepper. Sautee over medium until cauliflower is tender, stirring occasionally.
  4. Stir in vegetables. Top with chopped parsley.
