Cauliflower Pizza Crust

Ingredients
- 2 cups raw, grated/ food processor cauliflower (about half a large head)
- 1 egg
- 2 cups cheese blend
- 2 tsp. oregano
- 1 tsp. chopped garlic
- 2 tsp. parsley
- 1/2 cup tomato sauce
- Top with various fresh vegetables like tomato, onion or bell pepper
Directions
- Heat oven and baking pan to 425 degrees.
- Cook cauliflower until tender in the microwave, heat on high for about 8 minutes. On the stove-top, place a steamer insert into a saucepan. Fill water just below steamer and heat cauliflower until tender (roughly 10 minutes). Let cauliflower cool.
- Using a grater or food processor, break down the cauliflower to an almost rice-like consistency.
- Place cauliflower mixture on a dry dish cloth and wring out as much water as possible.
- Using your hands, mix cauliflower in a large bowl with 1 cup of cheese, egg, oregano, garlic and parsley.
- Form mixture into a round of dough and place it on a sheet of parchment paper. Pat the dough into a round crust, about 1/4 inch thick.
- Slide parchment paper onto the hot baking sheet and cook crust for 10 minutes or until it starts to brown.
- Remove from the oven and add sauce, topping and cheese. Bake for additional 5 minutes or so until cheese is bubbling.
