Greek Brown Rice Salad with Feta and Bell Peppers

Ingredients

  • 3/4 cup cooked brown rice
  • 1/4 cup finely chopped orange bell pepper
  • 1/4 cup raw broccoli florets
  • 3 Tbsp. crumbled feta cheese
  • 1/4 tsp. finely grated lemon peel
  • 1/8 tsp. coarse salt

Directions

  1. In a small to medium bowl, stir together all ingredients. Pour into a 16 oz. mug.
  2. Cover and microwave until the broccoli is tender, about 4 minutes.
