Greek Brown Rice Salad with Feta and Bell Peppers

Ingredients
- 3/4 cup cooked brown rice
- 1/4 cup finely chopped orange bell pepper
- 1/4 cup raw broccoli florets
- 3 Tbsp. crumbled feta cheese
- 1/4 tsp. finely grated lemon peel
- 1/8 tsp. coarse salt
Directions
- In a small to medium bowl, stir together all ingredients. Pour into a 16 oz. mug.
- Cover and microwave until the broccoli is tender, about 4 minutes.
