Nachos with Refried Beans and Avocado

Ingredients
- 1/2 cup canned refried beans
- 3 Tbsp. salsa
- 10 tortilla chips, plus more for serving
- 3 Tbsp. shredded Mexican cheese blend
- 1/2 avocado, diced (about 1/4 cup)
- 1 tsp. sour cream, for garnish
- 1 tsp. canned green chiles, for garnish
- 1 tsp. thinly sliced green onions, for garnush
Directions
- Spray a 16- oz. mug with cooking spray.
- In a small bowl, stir together beans and salsa.
- Place half the chips in the mug and top with a third of the cheese and half of the bean mixture. Top with remaining chips, another third of the cheese and remaining bean mixture. Top with the remaining cheese.
- Cover and microwave 1 minute. Uncover and microwave until cheese is completely melted, about another 30 seconds. Top with the avocado and other garnishes, and serve with additional chips, if desired.
