Cornish Game Hen with Honey and Paprika

Ingredients
- 2 Cornish game hens
- 2 Tbsp. honey
- 1 Tbsp. lemon juice
- 1 1/2 tsp. smoked paprika, or sweet or mild
- Salt and pepper
Directions
- Heat oven to 350 degrees (or 425 degrees for chicken). Rinse hens and pat dry with paper towels.
- Microwave honey for 15 seconds (or heat in a small saucepan) until it becomes an easily pourable liquid. Mix in lemon juice and paprika. Brush game hens thoroughly with this mixture, season with salt and pepper, and place on a rack atop a baking sheet.
- Roast 1 hour for hens weighing less than 1 lb. 2 oz. or 1 1/4 hours for hens weighing more than that, or until the internal temperature reaches 165 degrees.
- Keep a close watch, and lightly cover them with foil when the birds start to get too brown. After 45 minutes, baste with more of the honey-paprika mixture.
- let reat 10 minutes before serving.
