Vanilla Souffle

Serves 6 people

Ingredients

  • 1 Tbsp. confectioners' sugar
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup milk
  • 4 egg yolks
  • 1/2 cup sugar
  • 1 tsp. vanilla extract
  • 4 egg whites

Directions

  1. Butter bottom of a 1 1/2 -quart casserole and sift confectioners’ sugar over it.
  2. Melt butter in a saucepan, and stir in flour all at once. Cook until mixture bubbles. Remove from heat and gradually add milk, stirring to combine.
  3. Return to heat and bring rapidly to boiling. stirring constantly; cook 1 to 2 minutes longer. Cool slightly.
  4. Beat egg yolks, sugar and vanilla until thick and lemon colored, stirring vigorously to blend, pour sauce slowly into egg yolk mixture. Cool to lukewarm.
  5. Beat egg whites until rounded peaks form. Spread egg yolk mixture over egg whites and carefully fold together. Pour into casserole. Set in boiling water bath.
  6. Bake at 350 degrees 60 minutes or until silver knife comes out clean when inserted halfway between center and edge. Serve immediately form baking dish. Serve with apricot sauce or a puree of strawberries or raspberries.
