Warm Orange Rice Pudding

Ingredients
- 1 cup water
- 2 tsp. vanilla extract
- 1 tsp. ground ginger
- 2 Tbsp. sugar
- 1 cup Arborio rice
- 1 Tbsp. orange zest
- 2 cups low-fat milk
- 1/4 cup orange segments
Directions
- In a saucepan, bring water to a boil and add vanilla , ginger, sugar and rice.
- Lower heat and allow rice to absorb liquid, stirring as needed, about 10 minutes. When most of the liquid has been absorbed, add the orange zest and 1 cup milk.
- Allow the rice to absorb liquid and then add the other cup of milk.
- Continue cooking until all liquid is absorbed and rice is fully cooked.
- Serve in individual bowls with an orange segment on top.
