white Chocolate Bread Pudding

Ingredients

  • 1 loaf French bread, diced into 1/4-inch pieces
  • 24 whole eggs
  • 4 cups sugar
  • 2 quarts heavy cream
  • 2 quarts half and half
  • 3 Tbsp. vanilla extract
  • 2 cups pecans
  • 1 lb. chopped white chocolate

Directions

  1. Place diced French bread on a sheet pan, toast until brown. Spray baking pan with nonstick spray and place toasted bread in pan. In a separate pan, mix heavy cream, half and half, eggs, sugar, cinnamon and vanilla. Mix well and add to the bread.
  2. Add white chocolate and pecans and mix thoroughly, making sure that all the bread is wet. Bake covered at 350 degrees for 1 hour; uncover and bake at 300 degrees for an additional 45 minutes to 1 hour.
