Almond Pastry Cream

Ingredients

  • 1/3 lb. blanched almonds, finely ground
  • 1/2 cup confectioners sugar
  • 3 Tbsp. butter
  • 2 egg yolks
  • 1 Tbsp. rum or kirsch

Directions

  1. To finely ground blanched almonds, mix confectioners’ sugar. Set aside.
  2. Cream butter until softened. Beat in egg yolks and rum. Beat until well blended. Blend in almond-sugar mixture until smooth.
  3. makes 1 cup
