Ingredients
- 1 cup water
- 1 cup dried apricots
- 1/2 cups sugar
- 1/2 tsp. vanilla extract
- 2 cups all-purpose flour
- 3/4 tsp. salt
- 1/2 tsp. baking powder
- 2/3 cup lard or butter
- 4 to 6 Tbsp. ice cold water
- Confectioners' Sugar Glaze:
- 1 cup confectioners' sugar
- 1/2 tsp. vanilla extract
- 3 Tbsp. milk or cream.
Directions
- In a medium saucepan, bring water and apricots to boil and cook 20 minutes. Cool and process in a blender until smooth. Return to saucepan, add sugar and cook another 5 minutes, or until thick. Cool slightly and stir in vanilla.
- In a mixing bowl, combine flour, salt and baking powder. Cut in butter until crumbly. Add water, 1 Tbsp. at a time, tossing mixture with a fork until it holds together.
- Divide dough in half. Roll each half to a 14 by 10 inch rectangle on a lightly floured surface. Line a 10 × 13-inch pan with one of the rectangles. Spread the apricot mixture evenly to allow steam to escape while cooking.
- Bake at 400 degrees for 25 minutes until lightly browned on the edges. Cool slightly, top with glaze and cut into squares.

Confectioners’ Sugar Glaze:
- In the small bowl of a mixer, combine confectioners’ sugar, vanilla and milk. Blend until smooth and spread on bars.
