SAFFRON RICE

WONDERFUL SMELL AND FLAVOR WITHOUT SALT. GREAT TO SERVE WITH INDIAN DISHES.

Cook time: 20 minutes
Serves 4 people

Ingredients

  • 1/4 cup water
  • Several threads of Saffron
  • 2 1/2 cups water
  • 1 1/2 cups rice (Jasmine or Basmati)
  • Cilantro, chopped for garnish (optional)

Directions

  1. Soak Saffron threads for at least 2 hours.

  2. Boil 1/4 cup water in microwave.

  3. Add Saffron to water for the 2 hours.

  4. Bring 2 1/2 cups water to a boil in a pot.

  5. Rinse rice and add to water.

  6. Strain Saffron threads and add Saffron water to pan.

  7. Simmer 20 minutes and rest 10 minutes.

  8. Fluff with fork.
