Ingredients
- 1/2 cup granulated sugar
- 1 envelope unflavored gelatin
- 1/4 tsp. salt
- 4 egg yolks
- 1 cup milk, scalded
- Grated peel and juice of 1 lemon
- 1 package (3 oz.) ladyfingers, split lengthwise
- Raspberry jelly
- 1 cup heavy cream, whipped
- confectioners' sugar
Directions
- Blend granulated sugar, gelatin, salt and egg yolks in mixing bowl. With whisk beat in milk. Cook and stir in saucepan over low heat until mixture is smooth and slightly thickened. Stir in peel and juice, then chill until cold but not set. Spread cover with tops, forming sandwiches. Line bottom of 9 × 5 × 3- inch loaf pan crosswise with the sandwiches. Cut remaining ladyfingers in half crosswise and line sides of pan, cut side down. Fold cream into gelatin mixture until well blended and spoon into pan. Chill until firm (about 2 hours(. Loosen around edges with small spatula, unmold on serving plate, garnish with jelly between ladyfingers and sprinkle with softened confectioners’ sugar.
- To cook in microwave oven, blend granulated sugar, gelatin, salt and egg yolks in 1 1/2 quart glass casserole; set aside. Scald milk in 2-cup glass measuring cup in oven 3 minutes, or until milk boils; gradually add to egg mixture, beating vigorously. Cook 2 minutes, beating twice. Chill until cold but not set and proceed as above.
