Roasted Red Potatoes with Pesto

Ingredients
- 2 pounds red potatoes, washed and diced into 8ths, with skin left on
- 3 tablespoons of pesto (or enough to well-coat the potatoes)
- sea salt to taste
Directions

oven to 400.

Put diced potatoes into bowl and add enough pesto to coat the potatoes (may not be full 3 tablespoons).

Place on cookie sheet that has been sprayed with cooking spray and bake for 25-35 minutes, stirring once or twice throughout the cooking time. Let them get crispy and golden and soft and delicious!

Add sea salt to taste.
