Ingredients
- 2 eggs
- 3/4 cup confectioners' sugar
- 1/2 cup flour
- Whipped cream or topping
- Strawberry or preferred preserves
Directions
- With whisk beat eggs with sugar in mixing bowl about 1 minute, or until smooth. Fold in flour and beat 1 minutes longer. Drop by level measuring tablespoonsful onto well greased floured cookie sheet, leaving plenty of space between(about 4 to a sheet). With small spatula spread each to form a 5 1/2-inch cookie. Bake in preheated 400 degree over 3 minutes, or until golden (do not over bake). Loosen immediately with long flexible spatula, turn upside down and shape each cookie into a cone. Cool seam side down. Just before serving, fill with whipped cream and garnish with dollop of preserves. (Can also be filled with softened ice cream, custard or fruit salad, if desired.)
