Double-Dipped Baked Lemon-Pepper Chicken

Ingredients

  • 1 1/2 lbs. boneless, skinless chicken thighs (would work with legs as well)
  • 3 C panko bread crumbs
  • 1/2 C grated Parmesan cheese
  • 1 tsp. garlic powder
  • 1 tsp. pepper
  • 1 tsp. grated lemon peel
  • Lemon pepper
  • 1/2 tsp. salt ( not really necessary with cheese)
  • 2 eggs
  • 1/2 C milk
  • 2 Tbs. lemon juice (juice of 1/2 lemon)

Directions

  1. Preheat oven to 400 degrees ( I used convection oven)

  2. In a wide, shallow bowl, combine dry ingredients

  3. In a second bowl, combine eggs, milk and lemon juice and mix well.

  4. Dip each chicken piece first in crumbs, then in the egg mix and back in crumbs.

  5. Place chicken on a well greased pan and bake at 400 degrees for 45-60 min., turning pieces halfway through.
