Ingredients
- 1 pkg. (3oz.) Lemon Jell-O
- 1 cup boiling water
- 1 cup canned pineapple juice
- 1/2 tsp. salt
- 2 cups cold cooked rice
- 4 Tbsp. sugar
- 1 cup cream, whipped
- 1 pint fresh raspberries, optional
Directions
- Dissolve Jell-O in boiling water. Add pineapple juice and salt. Chill. When slightly thickened, beat with egg beater until the consistency of whipped cream. Fold rice into Jell-O. Fold sugar into cream. Fold cream into Jell-O mixture. Turn into mold. Chill until firm. Unmold. Serve with crushed raspberries.
