Yogurt-Fruit Mold

Ingredients

  • 2 envelopes unflavored gelatin
  • 1/4 cup sugar
  • 1/4 tsp. salt
  • 2 Tbsp. lemon juice
  • Dash of ground cloves
  • 2 containers (8oz.. each) apricot or other fruit yogurt
  • 1 can (1 lb.) fruit cocktail, drained
  • 1/2 cup chopped nuts (optional)

Directions

  1. Put 1 cup cold water in saucepan and sprinkle with the gelatin. Put over low heat, stirring, until gelatin is dissolved. Remove from heat and stir in next 4 ingredients and 1/2 cup cold water. Blend in yogurt. Chill, stirring occasionally, until slightly thickened. Fold in fruit cocktail, and nuts, if used. Pour into 5-cup mold or 6-individual serving dished. Chill until firm. Unmold if large mold is used.
