Ingredients
- 2 (17 oz.) cans apricot halves, drained
- 1/2 cup sugar
- 1/3 cup orange juice
- 3 Tbsp. lemon juice
- 2 Tbsp. apricot brandy (optional)
- 2 egg whites
- 1 Tbsp. sugar
- 1/2 cup whipping cream, whipped
Directions
- Combine apricots, 1/2 cup sugar, orange juice, lemon juice, and brandy in container of an electric blender; process until smooth.
- Pour mixture into freezer can of a 1-gallon hand-turned or electric freezer. Freeze according to manufacturer’s instructions for 10 to 15 minutes or until mixture has thickened.
- Beat egg whites(at room temperature) until foamy. Gradually add 1 Tbsp. sugar, beating until stiff peaks dorm; fold into whipped cream mixture into apricot mixture.

Continue to freeze according to manufacturer’s instructions. Let ripen at least 1 hour before serving.
