Ingredients
- Honey Balsamic Pulled Pork
- 4-5 lbs. pork shoulder butt roast, cut off all excess fat
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1 teaspoon of thyme
- 1/2 teaspoon of sage
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1/2 cup of balsamic vinegar
- 1/2 cup of tomato sauce
- 1 adobe chipotle pepper
- 1/4 cup of honey
- 1 cup yellow onion, chopped
- 8 Whole Wheat Buns
- BBQ Sauce - use your favorite (we use Sweet Baby Rays)
- Lime Cabbage Coleslaw:
- 11/2 cups of cabbage, thinly sliced
- 1 tablespoon of fresh lime juice
- 1 tablespoon of olive oil
- salt & pepper
Directions

Make the Honey Balsamic Pulled Pork. (will take about 6 hours in the Crock Pot)

Cut off excess fat from pork shoulder. Pat dry.

In a small bowl mix together, garlic powder, paprika, thyme, sage, salt, and pepper.

Rub seasoning mixture onto all sides of the pork.

Place pork in a large slow cooker.

In a medium size bowl, mix balsamic vinegar, tomato sauce, chipotle pepper, and honey.

Pour balsamic mixture over the pork.

Cover pork with chopped onion.

Cook on HIGH for 6 hours.

Remove pork from slow cooker and shred the meat, place meat back in the sauce.

In a small bowl, mix cabbage, lime juice, olive oil, salt & pepper.

Serve pulled pork on whole wheat buns with lime cabbage coleslaw and your favorite BBQ Sauce.
