Cool Lemon Pie with Graham Cracker Crust

Ingredients

  • Crust:
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup softened butter
  • Filling:
  • 2 cans sweetened condensed milk
  • 6 egg yolks
  • 1 cup fresh lemon juice
  • pinch of salt

Directions

  1. Mix dry ingredients for crust and add in butter, mix until thoroughly incorporated.
  2. Press crust mixture into 9-inch pie pan using your hands or flat bottomed measuring cup.
  3. Preheat oven to 400 degrees.
  4. Combine filling ingredients, and stir until blended. Pour into unbaked crust and bake at 400 degrees for 15 minutes or until small bubbles form at edges.
  5. Let cool on a wire rack and then put in the refrigerator until chilled.
  6. Serve with whipped cream and a lemon slice.
