Swordfish with peach salsa

Ingredients

  • Swordfish steaks-2 6-7 ounces each
  • For salsa:
  • 1 large peach
  • 1 yellow pepper
  • 1/2 habanero
  • 1 bunch green onions
  • 1/3 cup arugula
  • 1 garlic clove
  • 1/8 tsp salt
  • 1/4 cup lemon juice
  • 2 tsp dried oregano
  • For fish:
  • 4 tsp lemon juice
  • 4tsp olive oil
  • 1/4 tsp paprika
  • 1 garlic clove
  • Salt and pepper

Directions

  1. Mix together all salsa ingredients, set aside, chill in refrigerator if desired

  2. Mix together everything else and marinate fish for 20 min

  3. Pre-heat to 400 degrees

  4. Bake steaks for 11 minutes

  5. Garnish fish with salsa and serve
